Irresistible Blueberry Zucchini Bread

Ingredients:

  • 1 1/2 cups grated zucchini
  • 1 cup brown sugar
  • 2/3 cup vegetable oil
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 1 cup blueberries

Directions: preheat oven to 350 degrees

  1. Combine dry ingredients in a large bowl, stir with a whisk to break up any clumps.
  2. Combine brown sugar, vanilla, and vegetable oil in a separate bowl.
  3. Add eggs to wet mixture and stir until well blended.
  4. Add wet mixture to dry mixture and stir until uniform.
  5. Pour into a greased and floured bread loaf pan.
  6. Bake for 45 minutes.
  7. Use toothpick to check if bread is done in the middle.
  8. Remove from oven and let cook.

Serve alone or with butter or cream cheese spread.
