Irresistible Blueberry Zucchini Bread
Ingredients:
- 1 1/2 cups grated zucchini
- 1 cup brown sugar
- 2/3 cup vegetable oil
- 1 1/2 tsp vanilla extract
- 2 eggs
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp salt
- 1 cup blueberries
Directions: preheat oven to 350 degrees
- Combine dry ingredients in a large bowl, stir with a whisk to break up any clumps.
- Combine brown sugar, vanilla, and vegetable oil in a separate bowl.
- Add eggs to wet mixture and stir until well blended.
- Add wet mixture to dry mixture and stir until uniform.
- Pour into a greased and floured bread loaf pan.
- Bake for 45 minutes.
- Use toothpick to check if bread is done in the middle.
- Remove from oven and let cook.
Serve alone or with butter or cream cheese spread.
